Few herbs enjoy the combination of mythical, historical, medicinal, culinary and whimsical history that Thyme does. A humble little herb with an incredibly unassuming appearance that could be all too easily mistaken as a weed it can be hard to believe it is the powerhouse of both the culinary and historical medicinal herbal world.

Thyme was originally brought to the new world (The America's) from Europe because of it's unique ability to help prevent rancidity in fats. This was theoretically due to it's high antioxidant values. Thyme in the garden was also believed to be used by fairies as a home and no garden was considered complete without it.

Dried Thyme makes a wonderful addition in the kitchen to dishes that contains beef, chicken, fish, goat cheese, lamb, vegetables and legumes. One of our favorite uses for Thyme in the kitchen is in a big pot of golden chicken broth. Paired with Marjoram, it elevates soups to a whole new level of both flavor and health supporting properties.

Some of Thyme's unique active properties makes it incredibly soothing when lungs are irritated. A traditional soothing benefit of Thyme is to create a calming steam treatment by pouring boiling water over 1/4 a cup of dried Thyme in a bowl and carefully inhaling the steam with all it's soothing aroma.

Thyme Honey
1/2 cup lemon juice
1 cup raw honey
1 cup dried thyme

Pour honey and Thyme into a jar and place on counter. Shake once a day for two weeks. Strain honey and thyme through a fine mesh strainer at the end of two weeks (or longer if you wish). Add lemon juice. Shake well and store in refrigerator. Use a spoonful of Thyme Honey to sweeten herbal teas or take straight off a spoon as a tasty comfort measure when feeling off.

Note: Thyme is generally considered appropriate in tea and culinary amounts for all ages and while pregnant or nursing, but please consult your healthcare practitioner if you are pregnant, nursing, or on any medications.

Storage: Due to the Beeyoutiful's Herbs and Bulk Foods being organic or wildcrafted, there is a slight chance that there could be some naturally occurring bugs. Beeyoutiful takes precautions on our end to minimize the chances, but we do suggest that you store them in a cold area - possibly the freezer - in an air tight container.

I use a lot of thyme, but it was hard to find a good source locally for a decent price.  This thyme leaf is great!

When my children were little we ordered lots of thyme from MoreThanAlive to make a very effective Marshmallow Thyme Cough Syrup that got us thru many respiratory conflicts including the whooping cough. I was so impressed that every time I am cooking, I ask myself, as I reach into the spice cabinet, 'Can I put thyme in this?" And I often do, in varying amounts it has gone into eggs, meats, white sauces -as well as red sauces, breads, biscuits, pizza , chili, soups, gravies.....I do not think I ever put in a dessert yet.
